Blueberry parfait with different layers of blueberry chia pudding, porridge and blueberries.
Ingredients per serving:
1. Layer: Chia Pudding
- 150 ml plant based milk (e.g. oat or almond drink)
- 2-3 tbsp chia seeds
- 1 tsp blueberry powder
- sweetener of your choice
2. Layer: Porridge
- 3 tbsp rolled oats
- hot water
- coconut chips
- For the chia pudding: Combine blueberry powder, plant based milk and sweetener in a bowl. Stir well. Add the chia seeds and stir again. Let rest for about 2 minutes, then stir again. Allow the chia seeds to swell for at least 15 minutes.
- For the porridge: Combine oats with about 4-6 tbsp boiled water in a bowl. Stir well and let rest for 15 minutes.
- Pour the chia pudding in a jar. Add the porridge and decorate with some blueberries and coconut chips.
