Blueberry parfait with different layers of blueberry chia pudding, porridge and blueberries.

Ingredients per serving:

1. Layer: Chia Pudding

  • 150 ml plant based milk (e.g. oat or almond drink)
  • 2-3 tbsp chia seeds
  • 1 tsp blueberry powder
  • sweetener of your choice

2. Layer: Porridge

  • 3 tbsp rolled oats
  • hot water

On top:

  • blueberries
  • coconut chips

Directions:

  1. For the chia pudding: Combine blueberry powder, plant based milk and sweetener in a bowl. Stir well. Add the chia seeds and stir again. Let rest for about 2 minutes, then stir again. Allow the chia seeds to swell for at least 15 minutes.
  2. For the porridge: Combine oats with about 4-6 tbsp boiled water in a bowl. Stir well and let rest for 15 minutes.
  3. Pour the chia pudding in a jar. Add the porridge and decorate with some blueberries and coconut chips.
