Blue Chia Pudding Parfait with different layers of spirulina chia pudding, soy yogurt and spelt pops.

Ingredients per serving:

1. Layer: Chia Pudding

  • 150 ml plant based milk (e.g. oat or almond drink)
  • 2-3 tbsp chia seeds
  • 1 tsp blue spirulina
  • sweetener of your choice

2. Layer: Yogurt

  • about 200 ml soy yogurt

3. Layer: Spelt pops

  • 2 tbsp spelt pops

On top:

  • popped quinoa
  • blueberries

Directions:

  1. For the chia pudding: Combine spirulina, plant based milk and sweetener in a bowl. Stir well. Add the chia seeds and stir again. Let rest for about 2 minutes, then stir again. Allow the chia seeds to swell for at least 15 minutes.
  2. Pour half of the chia pudding into a glass.
  3. Add 100 ml soy yogurt.
  4. Add spelt pops.
  5. Repeat step 2 and 3.
  6. Finally, top the soy yogurt with popped quinoa and blueberries.
