Sweet berry vanilla tarts made with dates, cashews, vanilla pudding and berries

Ingredients for 2 tartelettes:

Crust:

  • 90g soft dates, pitted
  • 70 g cashews, raw
  • a pinch of cinnamon
  • 1/2 tsp vanilla

Pudding layer:

  • 1/4 package pudding powder vanilla
  • 130 ml soy drink
  • 1 tsp xylit
  • blueberries
  • raspberries
  • coconut chips
  • popped quinoa

Further ingredients:

  • wrapping film
  • 2 tart forms

Directions:

  1. To make the crust, combine all ingredients for it in a large bowl. Mix lightely by fingertip until a smooth dough is formed.
  2. Prepare the tart forms with wrapping film and press the date cashew mixture into the forms.
  3. In the meantime, prepare the pudding according to instructions on the package.
  4. Gently remove forms and wrapping film from the date cashew tarts and fill the pudding into them.
  5. Top the tarts with berries, coconut chips and popped quinoa.
  6. Let cool down a few minutes and enjoy the tarts warm or let them cool down completely.
