Vegan parfait with soy yogurt, chia pudding, spelt pops and berries. Perfect for breakfast.

Ingredients per serving:

1. Layer: Chia Pudding

  • 150 ml plant based milk (e.g. oat or almond drink)
  • 2-3 tbsp chia seeds
  • 1/2 tsp blue spirulina
  • 1/2 tsp pitaya powder
  • sweetener of your choice

2. Layer: Yogurt

  • about 250 ml soy yogurt

3. Layer: Spelt pops

  • 2 tbsp spelt pops

4. Layer: Berries

  • berries
  • cacao nibs
  • coconut chips

Directions:

  1. For the chia pudding: Combine spirulina, pitaya powder, plant based milk and sweetner in a bowl. Stir well. Add the chia seeds and stir again. Let rest for about 2 minutes, then stir again. Allow the chia seeds to swell for at least 15 minutes.
  2. Pour the chia pudding in a glass.
  3. Add the spelt pops.
  4. Add the soy yogurt.
  5. Finally top the soy yogurt with berries, cacao nibs and coconut chips.
